fix: clients 테이블 Collation 불일치 수정

- BUG-BANK-20260115-001: 은행거래 테이블 데이터 미표시 오류 해결
- clients 테이블 Collation을 utf8mb4_unicode_ci로 변경
- UNION 쿼리 (deposits, withdrawals, clients) 호환성 확보
- 통계 카드와 테이블 데이터 동기화 완료
